Grain-Free Blueberry Muffin

These are stunning grain free muffins loaded with antioxidants and protein. Serve the muffin as a snack or a very special breakfast “treat”. Make lots!

Ingredients

  • 2 cups almond flour

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1/4 cup virgin coconut oil

  • 1/2 cup raw honey

  • 3 medium eggs

  • 1 cup blueberry jam

Instructions

  1. Preheat oven to 180 C and line your muffin tin with muffin cases - this recipe made us 12 muffins

  2. In a food processor or mixing bowl combine the almond flour, salt, and baking soda

  3. Heat up the coconut oil in a pan until it's liquid and add to the almond flour mixture, along with the honey and eggs

  4. Fold in the blueberry jam so that it's not thoroughly mixed in but streaks through the mixture

  5. Pour the mixture into the muffin cases and bake in the oven for 25 minutes

  6. Cool on a rack and enjoy!

The science bit

BLUEBERRIES are rich in vitamin C and antioxidants, and are a wonderful source of soluble fiber – they also have low glycaemic load which means that they won’t cause big spikes in blood sugar levels.
