THE SCIENCE BIT

Numerous studies have shown that CABBAGE strengthens stomach muscles, which helps resist acid attacks, with one study showing the complete healing of the stomach lining in ulcer patients within 10 days of drinking just one cup of cabbage juice a day. Cabbage has the highest amount of some of the most powerful antioxidants found in cruciferous vegetables – phytonutrients such as thiocyanates, lutein, zeaxanthin, isothiocyanates, and sulforaphane, which stimulate detoxifying enzymes. Rich in vitamin K, cabbage provides 85 percent of the body’s daily requirement. This is very important, not only for bone metabolism, but known for limiting neuronal damage in the brain. The 54 percent daily value of vitamin C supplied to the body with one serving of cabbage is impressive, too – even more than oranges – which can help scavenge harmful, pro-inflammatory free radicals and protect against infection. CUCUMBERS are actually 90% water, and help clear out the kidneys and are an excellent source of vitamins, including anti-inflammatory vitamin K, infection-fighting vitamin C, and energy-producing pantothenic acid (vitamin B5). Body-beneficial minerals include bone-building manganese, as well as potassium and magnesium. PEARS are loaded with free radical-neutralizing antioxidants and have been shown to help improve insulin sensitivity, with several studies consistently showing the direct connection between consumption of pears and reduction in the risk of type 2 diabetes. Pears are also generally very well tolerated and can be easily digested. BEETROOT is a unique source of betaine, a nutrient that helps protects cells, proteins, and enzymes from environmental stress and helps fight inflammation. High in immune-supporting vitamin C, beetroot is loaded with fibre, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for our bones, liver, kidneys, and pancreas). Beetroot also contains the B vitamin folate, which is crucial in brain health. The betalin pigments in beets support the body’s Phase 2 detoxification process, and help purify your blood and your liver.
