GOOD MOOD KALE CRISPS

I know kale crisps are not a new thing and to suggest these are the best is a bold claim but this ridiculously easy recipe using only 3 ingredients can be made in less than 5 minutes and is seriously spectacular with an amazing umami type flavour that is just irresistible.

My daughter and I are both doing the Brainstorm Health 30-day Body Reset Diet which I often recommend to patients to get the body back on track, especially after a long winter. These yummy kale crisps have become one of our absolute favourite snacks to have. Loaded with B vitamins to support the nervous system, the addition of almond butter for the protein and coconut oil for the healthy fats really help hit the spot when you are looking for something to tide you over before your main meal.

Ingredients

  • 100 grams kale
  • 1 tbsp coconut oil
  • 1.5 tbsp almond butter
  • 1 sprinkle sea salt

Instructions

  • Set the oven to 150 degrees Celcius.
  • Take the kale off the stalks and cut or tear into large pieces.
  • Mix the coconut oil and almond butter and rub all over the kale until each piece is covered nicely.
  • Place in a baking tray in one layer - you may need serval trays for a large batch, sprinkle generously with sea salt and place in the oven. Halfway through turning the crisps over for a really crunchy bite.
  • Remove from the oven and let cool and munch away.

THE SCIENCE BIT

KALE is one of the best sources of vitamin K which is so often low in the children we work with. Vitamin K is normally made via gut bugs and when there is a compromised gut microbiome this particular vitamin can really become depleted. Vitamin K is particularly important for those on a dairy free diet as it helps support bone health. KALE is an excellent source of vitamin A which is key a nutrient for repairing the gut lining and a major nutrient for supporting a healthy immune system. KALE is also a good source of folate which supports the detoxification system and is a key cofactor in helping make healthy levels of stomach acid to help cleave off nutrients from food and protect the gut from nasty bugs.
