BEET THE PINK SENSATION

This incredible pink sensation is one my kids favourite after-school snacks, served with lots of crudités.  The sweetness of the beets is offset beautifully by the tang of the lemon and the creaminess of the tahini and the cannellini beans. Beets are loaded with anti-oxidants and are highly anti-inflammatory. They are one of the best foods to support the liver and gallbladder and help promote the production of nitric oxide to help blood flow to the body and brain. Beets are also one of the best foods to help with stubborn constipation.

Ingredients

  • 2 large raw beetroot
  • 1 cup cooked cannellini beans
  • 2 tbsp tahini
  • 4 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 chopped garlic
  • 1 tsp ground coriander seeds
  • 1 tsp sea salt

Instructions

  • Set the oven to 200 degrees celsius
  • Peel the beetroot and cut into wedges and place in an ovenproof dish
  • Sprinkle some salt and drizzle some olive oil on top and place in the oven to cook for between 20 and 30 minutes until soft
  • When cooked through, take the beetroot out of the oven and leave to cool for a bit
  • Place the cooled beetroot and all other ingredients in a food processor and process until you have a smooth consistency. This make take a minute or two
  • Serve immediately and keep any left over in a covered glass bowl or jar in the fridge for up to 3 to 4 days

THE SCIENCE BIT

Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support. The detox support provided by betalains includes support of some especially important Phase 2 detox steps involving glutathione. Beets are also an excellent source of folate and a very good source of manganese, potassium and copper. They are also a good source of dietary fibre, magnesium, phosphorus, vitamin C, iron and vitamin B6 If you notice pink urine after consuming beetroot, it could be that the stomach HCL needs some support.
