We love this recipe – it is an absolute favourite in our household – It takes minutes to make and is a fantastic way of getting Super Foods into the diet.
The coconut and lime CAULIFLOWER “rice” is loaded with sulforaphane, which has been shown to improve mood and communication skills and is packed with antioxidants including; vitamin C, beta-carotene, kaempferol, quercetin (antihistamine), rutin, and much more. The “rice” is a perfect accompaniment to the deliciously sticky sweet and sour CHICKEN which is packed with protein and the amino acid tryptophan making it a natural stress buster and sleep aid.
